Espresso machines must be "tuned" for your cup sizes.To most people it might come as a surprise that espresso machines require some "tuning" before they can most successfully be used as a business appliance. The European cup above will contain approximately 150ml of coffee beverage and require 7-8 grams of ground coffee to achieve "continental strength". The cup on the right will hold approximately 250ml of coffee beverage and requires 11.7-13.3 grams of ground coffee to achieve the same strength. Large take/away cups, French Bowls, etc. frequently require 21 grams of ground coffee to produce a desirable beverage. Many espresso machines are designed with portafilters that will not accept a filter basket larger than 14 grams. Hence, multiple brewing cycles are required when making these beverages. This reduces the speed and efficiency of the Barista and increases the customer waiting time. The espresso machine will be one of your most expensive business assets. There are many attributes you should consider before purchasing. It is important that your machine have the greatest flexibility so that your use of it can adapt to the changing requirements of your business. When choosing the espresso machine for your business, the best advice is to limit your choice to those that are capable of using filter baskets up to 21 grams.
